Probablemente, son muchos los que se han planteado esta pregunta al pensar en el ingrediente ideal para ensaladas o tostadas, pero lo cierto es que no en todos los lugares del mundo existe una idea clara sobre la composición o los beneficios de este producto, que constituye la base de la dieta mediterránea y un ejemplo de alimento saludable en forma de oro líquido.

En cualquier caso, si se traslada esta pregunta, ¿qué es el aceite de oliva virgen extra?, a cualquier lugar de España, es posible que cualquiera proporcione una respuesta bastante aceptable, puesto que en nuestro país este producto es muy conocido. Sin embargo, en algunos países puede que el concepto resulte más bien enigmático. El aceite de oliva virgen extra constituye una grasa de origen vegetal con calidad máxima, cuyo contenido en antioxidantes lo convierten en el rey de la dieta mediterránea y en el príncipe de las tradiciones más ancestrales de la gastronomía española.

Ahora bien, ¿cuál es la diferencia entre el aceite de oliva tal cual, el aceite de oliva virgen y el aceite de oliva virgen extra? Evidentemente, la calidad, como de costumbre. Ahora bien, ¿qué es el aceite de oliva virgen extra exactamente? Se trata del aceite de oliva que adquiere la máxima calidad, no sólo en cuanto a composición y sabor, sino también en lo relativo a acidez y efectos saludables. En ese sentido, cabe recordar que esta variedad se consigue al procesar las aceitunas en su grado de madurez ideal, por lo que sus características son las mejores entre las mejores.

Por otro lado, uno de los aspectos atribuidos habitualmente a esta variedad de calidad máxima es precisamente su carácter exclusivo y su precio elevado. No obstante, no tenemos la costumbre de comparar la verdadera calidad con el coste del producto, por lo que en algunas ocasiones los consumidores proporcionan una respuesta fija a la cuestión de qué es el aceite de oliva virgen extra: es el tipo de aceite que no me puedo permitir. A ese respecto, se han efectuado muchas pruebas a modo de contrapartida para contrarrestar este prejuicio tan común.

La composición de este tipo de aceite permite que sus propiedad permanezcan intactas incluso después de emplearlo para freír o cocinar al horno o a la plancha. De hecho, no se descompone con tanta facilidad como otros tipos de aceite, sin olvidar su textura y su sabor. Por consiguiente, ¿qué es el aceite de oliva virgen extra realmente? Una mezcla que implica un toque especial y un sabor mágico que permitirá ahorrar dinero y acumular salud.

Además, ¿qué es el aceite de oliva virgen extra desde el punto de vista comercial? Es el producto que se empezará a encontrar en todos los supermercados del mundo, ya que constituye un producto estrella en tanto que fuente de ácido oleico, fenoles y vitamina E; elementos cuyo consumo revierte positivamente contra la oxidación de los tejidos.

En cuanto a sus efectos beneficiosos para la salud, ¿qué es el aceite de oliva virgen extra y por qué es tan beneficioso? Sin duda, se trata de la clave incide en niveles de lipoproteínas de baja densidad, lo cual supone una disminución en el nivel de oxidación corporal. En consecuencia, diríamos que se trata de una herramienta con valor preventivo.

Analisis sensorial aceite de olivaQue los participantes adquieran amplios conocimientos sobre los distintos atributos positivos y /o negativos del aceite de oliva virgen, así como conocer las distintas variedades más importantes del panorama oleícola español, establecimiento de umbrales y utilización de las de las diferentes escalas de  acuerdo con las normativas internacionales vigentes.
